Happy Hallowe'en!

I watched the first 4 episodes of The Chilling Adventures of Sabrina the Teenage Witch at the weekend and so far I find it quite interesting and not what I was expecting.  Kane and I keep trying to place what year it might be set in but the furniture, clothes, tech, music and pop culture references are so mixed up!

The weather turned to custard over the weekend as well and our beautiful warm spring days were replaced with gloomy dark and rain filled ones - no garden was mowed this weekend!

It really added to the atmosphere of the TV show though, and I felt very inspired to decorate for Hallowe'en.  I pulled the box of decorations from the garage and set to work putting fake cobwebs, spiders and ravens out the front of the house and then decorating the front door area with more cobwebs, spiders, ravens, a skull, besom and streamers.  I got the bluetooth speaker and tested out the spooky Hallowe'en sound effects and set my Hue hall lights to flash and change colours.

We don't always get Trick-or-Treaters around where I live, but we have had a few in previous years so I like to get some chocolatey treats in just in case (and then I get to eat them if not many kids show up!) I think now I've decorated we might get more kids so less lollies for me :(

China Anniversary Trip: Day 1

We flew from Auckland, NZ to Sydney, Australia and then had a long wait at the airport for our flight to Beijing, China but we kept ourselves entertained.  I didn't quite realise how long the flight to China would be, anything less than the 30 hour journeys to visit family in Scotland seems short!  I also didn't realise just how big Australia is, it took hours to fly over it.

We arrived at Beijing airport quite late at night and the trains stop running about 11pm but we had planned to get a taxi anyway.  Happily the signs were in English as well as Chinese so we followed the directions to get the official taxi ranks.  We had the name of the hotel written down in Chinese so we could show the driver and we were able to just relax and enjoy our midnight ride into Beijing CBD.
Our hotel was amazing and modernly fancy with big LCD screens in lobby.  This was definitely a very special vacation.

The next day, feeling refreshed and ready to start our adventure, we decided to take a walk around and get to know our surroundings a bit better.

Our hotel is part of the World Trade Centre, with a fancy shopping mall underneath and lots of nice restaurants and eateries.  And right outside is the CCTV building.
We came across a figure skating competition happening in the ice rink that was in the mall.  The kids were so cute and Kane and I were reminded of our own ice skating lessons.
People (family members, I presume) would through teddy bears and other stuffed toys onto the ice as the skater took their bows.

We found a grocery store and picked up some breakfast and light meal supplies then after dropping them off in our room we went to the Temple of the Sun Park.

The road along to the Temple of the Sun houses lots and lots of embassies and Kane and I had fun identifying all the flags.

Being here made me so happy; listening to the sounds of music and watching people having fun.
 

  I found out that this bird is a type of magpie and I just loved its colours.
 
The park was full of different activities, from these ladies dancing, to people singing to playing mahjong, cards, chess, table tennis to using the exercise equipment and climbing wall.



After wandering around fully soaking up the sights and sounds we headed back to our hotel and the pub to have a nice beer and get ready for our first tour the following day.




20th Wedding Anniversary

It was our 20th wedding anniversary on the 4th of April and we wanted to mark the occasion in a special way.  I looked up what the traditional gift for this anniversary is and it turns out it is china.  I'm pretty happy with my crockery, however it's been a long time dream of mine to visit the Great Wall of China and for the whole time I've known Kane he has always had a love of Chinese historical culture, martial arts and of course food!  It was the perfect gift to give ourselves!

We were there for 11 days, and we had the best holiday.  I still can't believe how great it was and I'm grateful to have those wonderful memories.

Pancake Day and Valentines Day

Pancake Day

Today is pancake day and I had a tasty cherry pancake for breakfast this morning that I had put in the freezer from the weekend.  Not quite the same heated in the microwaved rather than fresh off the skillet, but much faster and better that toast :)  

I make my vegan pancakes from this recipe by Parsley Soup but here is my Cherry Pancake version:

// Pancakes //

Ingredients

225g Self Raising Flour
pinch of salt
25g caster sugar
350ml soya milk
1/2 cup of jar or tinned cherries (I used left over filling from pies I was making)

Method

  1. Put all dry ingredients in a food processor and pulse to mix.
  2. Pour in milk with motor running until smooth.
  3. Add cherries and pulse to combine, but not make too smooth
  4. Transfer batter into a jug
  5. Pour in small batches into a hot skillet
  6. Wait until bubbles appear all over the surface of the pancakes, then flip them over and cook on the other side until browned. 
You can pop your oven on warm and then transfer the cooked pancakes into the oven while you continue making more.

This can make anywhere between 8 and 16 pancakes depending on how big you like them :)

Valentines Day

This is a super easy fun Valentines Day drink.  I actually found this idea years ago as a Christmas celebration drink.  The basic idea is that you freeze fruit juice and then add to champagne or fizzy wine.

I found these lovely heart shaped molds in IKEA and they are useful for ice cubes, melted chocolate etc.

Find a new fruit juice you like, dark coloured ones are more dramatic when they melt.  I went for pomegranate

And now for my Valentines cookie fail!

With the leftover pasty from the cherry pies I made I cut them into hearts and added jam.  Well I should have made little wells in the pastry or something to contain the jam better because it spread in the heat of the oven and just went every where.  My hearts look more hallowe'en gruesome that valentines romantic!

The Great Pumpkin Carnival

At the weekend we went to the Great Pumpkin Carnival in Hamilton. 

We went to this for the first time last year (which I mentioned in this post: Weekend Recap) and had a fun experience but this year I wanted to take part in the pumpkin baking contest.  The clocks went back an hour at 2am on Sunday morning so I had the luxury of a little extra sleep before I started baking.

I made pumpkin chocolate chip muffins and they were barely out of the oven before we taste tested them.  We 'taste tested' a half dozen of them and selected the 4 best looking ones for the box before jumping in the car for the 1.5 hour road trip down to Hamilton.

I love a good road trip and I love driving in the Waikato, the countryside scenery reminds me of home.

Once we arrived in Hamilton Gardens I went and registered my muffins.  There were 3 categories, Muffins & Scones, Pumpkin Cake, and Pumpkin Pie.  Then we wandered around to look at the pumpkins entered into the other contests.

It was very visually satisfying to look at the entrants into the Most Perfect Pumpkin and Best Mature Miniature Pumpkin categories.

I loved some of the Carved Pumpkins and Best Names Creations and I think I may also enter into this category next year too.

We took a break from pumpkins, got some tasty dairy free ice blocks and wandered around the roses and other parts of the gardens we hadn't been to before.
 
We had some lunch and saw some square dancing that was happening nearby - it's a different world outside of the city!

We returned to the pumpkins in time for the Pumpkin Racers.  The crowd were quite enthusiastic.

The giant pumpkins are very popular and there are two categories, Heaviest Pumpkin Over 200kgs and Heaviest Pumpkin Under 200kgs.  Tim Harris has won in the over 200kgs category for the past 5 years and his winner last year and again this year has been a record breaker!  This years winning weight was 789.5kg while the second place one was 260kg - amazing!

I was absolutely delighted to find my muffins had come second place!  I'd never entered a baking contest before and it was so exciting to take part, I never expected to place.  I'm already thinking about next years event and all the categories I want to enter haha!

St Patricks Day Tea Cosy

Happy St Patrick's Day!

I've been meaning to make a tea cosy for myself for a while and since I've been spending more time in my home office I'm drinking much more tea by myself.  To help prevent the too-cool-second-cup problem I thought it was a good time to find a nice pattern and get it sorted.

My number one source for knitting patterns is Ravelry so I did a pattern search for an easy tea cosy and this lovely pattern called Little Cupcake Tea Cosy by Lisa Sisk caught my eye.  The pattern is available for free on Ravelry or it can be purchased for 3 Euro from This Is Knit.

When I went over to my box of yarn to pick one out for this project, this green colour immediately jumped out at me and it's perfect for a St Patrick's day tea cosy.  Now I just need to pick up some Irish Breakfast tea from the supermarket and I'm all set.

Pi Day

Happy Pi day math fans!  Whilst I do like maths, I love pies more and I'm happy to have any excuse to make pies.

I love both savoury and sweet pies.  Back in Scotland they do macaroni cheese pies and rhubarb pies both are in pastry shells made of hot water pastry and they are so good.  You don't get those here so if I want them I'll have to try and make my own hot water pastry and I'm just not that brave yet.

Frozen pastry is what I tend to use in my pie making and I normally use puff pastry but sometimes I use short pastry.

For dinner I made a simple vegetable pie.  My aunt used to make vegetable hand pies that were the best and I've been trying to recreate them but I've still not got it quite right.  Since I've been really in to using my pressure cooker lately, I was able to cook the pie filling quickly, actually it took longer to peel and chop than in did to cook!  I diced up potatoes, onions, carrots and sautéed them in some butter then added frozen peas and corn and a chicken flavour stock cube in boiling water.  I lined a pie tin with thawed puff pastry, added the filling and sealed some pastry on top.  I gave it an egg wash and popped it in the oven.


Next time I'll need to remember to spray or grease the pie tin though because it was a little tricky trying to get it out!

Vegetable Pie
For dessert I made a blueberry pie using most of a bag of frozen blueberries heated in a pot with a cup of caster sugar and then added this filling to some more of thawed pastry sheets.  We served this with lemon ice cream and it was too delicious to stop and take a photo, oops!

I have some vegetable pie filling left over which I'm thinking about making into a chowder, not sure if that'll work but I feel like experimenting :)

Kane's Citizenship Day

On Monday 15th February Kane became a New Zealand Citizen!

He applied for citizenship at the end of last year and was accepted, the last step is the citizenship ceremony where we would take an oath or affirmation and he just needed to wait for a letter informing him where and when it was.

Along with other important details, the letter contained some dress code instructions and encouraged the wearing of traditional dress from your country of origin - so for Kane that meant the kilt. Every man looks good in a kilt but, and perhaps I'm bias, Kane looks especially handsome!

A quick selfie and then we were out the door and on our way to the Fickling Convention Centre which is where our local ceremony was taking place.

There was a little bit of a queue when we arrived and in front of us was one large family who were all going through the ceremony together - how special for them!

Once inside we were separated as Kane had an assigned seat and I had to sit in the area allocated to guests.  I'm already a citizen by birth, but my parents who had emigrated to NZ years before decided to return home shortly after my birth so until Kane and I moved here, I had never actually lived here.

The ceremony began with welcomes in Maori and English, introductions of the ceremony officials, and blessings in Maori and English.

This was followed by a cultural display of music and dance.  It was really lovely, inspiring and uplifting.

After this the oaths and affirmations were recited en masse and then everyone went across the stage individually to receive their certificate and to greet the officials with a hongi and/or a handshake.

Once everyone had their certificates, we watched a video presentation that made everyone super proud to be New Zealanders.  One of the things mentioned in the video is that NZ gives permanent residents the same rights as citizens, so by making the choice to become a citizen you are showing your commitment to New Zealand.

Then we sang the National Anthem and before closing, the compere called all the countries of origin represented that day and the people stood up and gave a wave - it was so awesome!

Then we had some morning tea refreshments and finished up about 11 am.

We took some photos in and around the convention centre and then headed out to Soljans wine estate for a celebratory lunch.

Lunch was delicious!  I've been to this winery a few times for wine tasting at the cellar door and have always fancied checking out their restaurant and today was the perfect time to try it.

We had 3 courses and they were all delicious I would certainly recommend it.  Of course the star of the show at a vineyard is the wine and we both went for the chardonnay which did not disappoint.

After a lovely and very filling lunch we headed home to get changed, rest up and then head out to the Air New Zealand exhibit at the museum.  Kane loves all things flight related and this seemed like an on topic thing to do.

I recognised the wall design instantly as my parents had quite a few of these swizzle sticks in our kitchen when I was a kid.  I wonder if they still have any?..

To finish the day off celebrating being New Zealanders we got some fish and chips for dinner and opened the bottle of champagne we bought at Soljans.  A very good day.




Race Recap: Albany Lakes Series Race 2

I wore my bright pink tights, love heart sunglasses and ran a 10k for Valentines Day.  It was also my friends birthday and she did the 5k then we met up with others for a well deserved brunch.

Distance: 10 km
Time: 1:11:20
Pace: 07:08 min/km

Pre-Race

Saturday night was spent hanging out with a good bunch of people.  We had a barbeque and then watched a movie so it was quite social but chilled.  Due to it being a barbeque, Kane and I had vegetable skewers and a salad for dinner followed by watermelon and a muffin.  It was very tasty but I don't think it was quite enough for racing the next day.

I was being careful to make sure I stayed hydrated, but I need to also watch the fuel intake for the next race.

On The Course

0 - 5 km

The first half of the course was pretty steady.  I felt really good and I was surprised at how quickly the first 5k went by.  I was deliberately taking my time because I knew I had another 5k to go, but I ended up doing this 5k 20 seconds faster than the 5k race 3 weeks ago - oops!

5 - 10 km

I can't think of another race where I've had to do laps before so I think this is my time.  It didn't actually feel too terrible to run away from the finish line as I was mentally prepared for this.  However right on queue my sun glasses - which were love heart shaped glasses for Valentines day - started to fog up and I had little pools of sweat gathering around the points.  I gave them a quick wipe and considered taking them off but decided just to go with it.

Then as I climbed up a small incline away from the finish line I started to feel quite fatigued.  I struggled to get my breathing under control but then it was a nice long flattish downhill and I was able to gather myself.

The struggle truly began at the 7k point and I really really wanted to walk.  My legs felt tired and tight, my lower back started to hurt and my body just wanted to hunch over, breathing was difficult to control.  Alex (from Moxiee Running who I've blogged about before) was running the second half with me and he would not let me walk, not even for a second.  He kept me distracted, gave me good pointers about when to take on water and helped me get my breathing back under control when I needed to but there was no way he was letting me walk.  Walking is the enemy apparently.

Somehow I managed to keep going and get up the hill towards the end that seemed easy 4km ago and then it was a nice downhill and long flat to the end and I managed to get a tiny bit of power and speed back.  However, I made a mistake with how much I had left in me and gave a burst of speed that lasted about 10 seconds and then I felt like I was going to throw up and I still had 400 metres to go :(

I struggled on and managed to look smooth going down the finishing straight.

Post Race

The last 2 km of the race felt so difficult and I felt so sore through my back and legs that I was really surprised at the finish how quickly I felt absolutely fine.  I felt like I could manage a few more k's!  Even the following day I didn't feel any soreness at all.

It was my friends birthday brunch and she had gone to cleaned up prior to the prize giving but I needed some time to stop sweating before getting cleaned up and then we went and had some good food and conversation which was a great way to finish up the morning.

What's Next

The third and final race of the series is another 10k with a slightly different route where we run inside the QBE stadium and through the Westfield shopping mall and that's in 2 weeks time.  I'm hoping to improve on my time, but more importantly I want to get the fuelling and race strategy right.
